Messapian walls a short walk from your door, Primitivo vineyards all around, the piazza in the evening. By the second morning, the town knows your name.
15Dolcevita is an albergo diffuso: suites scattered across restored historic buildings in the old town of Manduria that work as one place, with one noble kitchen for everyone, a gymnásion and a courtyard. You book a suite and stay. A small circle of founding members, by invitation or application, meets at the same table, and some of them go on to buy and restore a house of their own in the old town, through ManduriaShire.
What is an albergo diffuso?
An albergo diffuso is an Italian way of staying: the rooms are spread across several restored buildings of a historic centre, a few minutes' walk apart, with one kitchen and one living room for everyone. It was born to bring life back to villages and old towns without building anything new. 15Dolcevita follows that model in Manduria, Salento, Puglia: three suites at Via Verdi 15 first, then more houses, one at a time.
Where is 15Dolcevita located?
15Dolcevita is located at Via Giuseppe Verdi 15, Manduria (TA), 74024, Salento, Puglia, Italy, about 15 minutes from the Ionian Sea (San Pietro in Bevagna), about 50 minutes from Brindisi Airport, and 50 minutes from Lecce.
When does 15Dolcevita open?
15Dolcevita is planned to open in summer 2027. The restoration is under way in Manduria's historic centre. The restoration diary at https://15dolcevita.club/cantiere documents the work as it happens.
Is it open in winter?
Yes, all year, from the very first winter. Manduria does not close when the beaches do: the piazza, the shops and the people are all still here. Winter is the season of the hamam's steam in the Wellness Suite, a hot bath under the stone vault and long dinners in the noble kitchen, with the town around you.
Why is it called 15Dolcevita?
For two fifteens: our street number, Via Verdi 15, and Carlos Moreno's fifteen-minute city. In the old town of Manduria everything is a quarter of an hour away on foot.

1. Data collected
a) Application form and waiting list: your first name, surname, email address, city and country, and the interest you choose. We receive them through Netlify Forms (Netlify Inc., United States), the forms service of the company that hosts the site, and use them only to reply to you about your application and the 15Dolcevita waiting list. Your first name, surname, email and language are also passed on to Intuit Mailchimp, which keeps the list: you receive an email to confirm, and only if you confirm do we write to you when bookings open.
b) Monthly letter (only if you tick the box in the form): your email address, to send you the 15Dolcevita letter, at most once a month.
Good News from Manduria (if you subscribe with the form in the middle of an issue or tick its box in our other forms): your email address, to send you each new issue, once a week, and nothing else. These addresses are also passed on to Intuit Mailchimp, with the same confirmation email; every email has, at the bottom, a link to choose which of our newsletters you receive and a link to unsubscribe.
c) Google Analytics 4 (only with your consent to statistics): data on visits (pages viewed, duration, country, device), which we read in aggregated form. This is pseudonymous data: a random identifier stored in the cookie, with no name or email address. The service is provided by Google Ireland Limited.
d) Google Ads and the Meta pixel (only with your consent to advertising): we use them to measure our campaigns and to show our adverts to people who have visited this site and to people who resemble them. They are provided by Google Ireland Limited and Meta Platforms Ireland Limited. With your consent to statistics only, the Google tag sends Google Ads a cookieless, non-personalised signal.
e) Email: we use the emails you send us only to reply to you.
Reviews and noticeboard requests: If you write to redazione@manduriashire.it, we use your message only to prepare Good News from Manduria. We publish a review or a request only if you tell us so, with your first name and town and never your email address or other contact details. Writing to this address does not subscribe you to anything. Ask us at any time to remove your message.
f) Logs and page speed: our host keeps standard access logs (the IP address, the browser type and the page requested) for security and to keep the site running, and measures from our own domain how quickly pages load. It measures the page, not the person.
2. Legal basis
The application form is based on pre-contractual steps taken at your request (Article 6(1)(b) of the GDPR). The monthly letter, Good News from Manduria, the waiting-list emails, Google Analytics, Google Ads and the Meta pixel are based on your consent (Article 6(1)(a) of the GDPR), which you give with the box or the form, with the confirmation email or through the cookie banner and can withdraw at any time.
3. Data retention
Applications are kept until you ask us to delete them or until the project closes, and in any case for no longer than 36 months from submission. The addresses for the monthly letter and for Good News from Manduria are kept until you unsubscribe. Google Analytics user-level and event-level data is kept for the period set in Google Analytics, at most 14 months. The cookies last up to two years (_ga, _ga_XL7Y7DT8BM) and up to three months (_gcl_au, _gcl_aw, _fbp, _fbc). Emails are kept for as long as we need to reply to you.
4. Your rights
Under Articles 15 to 22 of the GDPR you have the rights of access, rectification, erasure, restriction, portability and objection; under Article 7 you can withdraw your consent at any time. Write to ciao@15dolcevita.club: we answer within one month.
You can also lodge a complaint with the Garante per la protezione dei dati personali (the Italian data protection authority, www.garanteprivacy.it) or with the supervisory authority of the country where you live or work.
5. Who receives the data
Data processors (Article 28 GDPR): Netlify Inc. (United States), for hosting the site and the forms (applications, monthly letter and Good News from Manduria); Intuit Mailchimp (The Rocket Science Group LLC, United States), for the waiting list, the monthly letter and Good News from Manduria; Google Ireland Limited, for Google Analytics 4.
Independent controllers and joint controllers: for Google Ads, Google Ireland Limited is an independent controller, under its own terms for data controllers. For the Meta pixel, the collection and transmission of data take place under joint controllership with Meta Platforms Ireland Limited (Article 26 GDPR, Meta's joint controller agreement); for everything else Meta is an independent controller.
Transfers outside the European Union: Netlify, Mailchimp, Google and Meta process some of the data in the United States. Netlify Inc., The Rocket Science Group LLC, Google LLC and Meta Platforms, Inc. adhere to the EU-US Data Privacy Framework and apply the European Commission's standard contractual clauses. Li riceviamo tramite Netlify Forms (Netlify Inc., Stati Uniti), il servizio moduli di chi ospita il sito, e li usiamo solo per risponderti sulla tua candidatura e sulla lista d'attesa di 15Dolcevita. Nome, cognome, email e lingua passano anche a Intuit Mailchimp, che tiene la lista: ti arriva un'email per confermare, e solo se confermi ti scriviamo quando si aprono le prenotazioni.

Good News from Manduria (se ti iscrivi con il modulo a metà di un numero o ne spunti la casella negli altri nostri moduli): il tuo indirizzo email, per mandarti ogni nuovo numero, una volta alla settimana, e nient'altro. Anche questi indirizzi passano a Intuit Mailchimp, con la stessa email di conferma; in fondo a ogni email ci sono il link per scegliere quali nostre newsletter ricevere e quello per cancellarti.
c) Google Analytics 4 (solo con il consenso alle statistiche): dati sulle visite (pagine viste, durata, paese, dispositivo), che leggiamo in forma aggregata. Sono dati pseudonimi: un identificativo casuale salvato nel cookie, senza nome né email. Il servizio è fornito da Google Ireland Limited.
d) Google Ads e pixel di Meta (solo con il consenso alla pubblicità): servono a misurare le nostre campagne e a mostrare i nostri annunci a chi ha visitato il sito e a chi gli somiglia. Li forniscono Google Ireland Limited e Meta Platforms Ireland Limited. Con il solo consenso alle statistiche, il tag di Google manda a Google Ads un segnale senza cookie e non personalizzato.
e) Email: le email che ci scrivi le usiamo solo per risponderti.

La lettera mensile, Good News from Manduria, le email della lista d'attesa, Google Analytics, Google Ads e il pixel di Meta si basano sul tuo consenso (art. 6, par. 1, lett. a del GDPR), che dai con la casella o con il modulo, con l'email di conferma o con il banner dei cookie e che puoi revocare in qualsiasi momento.
3. Conservazione dei dati
Le candidature restano finché non ci chiedi di cancellarle o fino alla chiusura del progetto, e comunque non oltre 36 mesi dall'invio. L'indirizzo della lettera mensile e quello di Good News from Manduria si conservano finché non ti cancelli. I dati di Google Analytics a livello di utente e di evento restano per il periodo impostato in Google Analytics, al massimo 14 mesi. I cookie durano fino a 2 anni (_ga, _ga_XL7Y7DT8BM) e fino a 3 mesi (_gcl_au, _gcl_aw, _fbp, _fbc). Le email restano per il tempo che serve a risponderti.
4. I tuoi diritti

c) Google Analytics 4 (uniquement avec votre consentement aux statistiques) : données sur les visites (pages vues, durée, pays, appareil), que nous consultons sous forme agrégée.
